Rainbow Rice

Dress up your favorite rice dish with this gourmet Rainbow Rice dish.

For this recipe you can use any type of rice. No matter which rice you choose, the sautéed vegetables will add a rich flavor to every spoonful. 

This recipe calls for alot of dicing. A vegetable chopper would be very helpful.

We used a vase. You can use any glass bowl or vase to get the look. The straighter the sides of the vase, the more you will see the layers. 

You can use this rice layering idea with any Poke Bowl recipe as well.

For added flavor, add sautéed onions to the centers of the pepper layers. We place them in the center of each layer so they are not seen.

 

 

Rainbow Rice

Equipment

  • 2 quart glass bowl

Ingredients
  

  • 2 ½ cups white or bismatti rice
  • 3 red peppers
  • 3 yellow peppers
  • 3 green peppers
  • 3 orange peppers

Instructions
 

  • Cook rice according to directions on package.
  • Add salt and pepper to taste.
  • Dice red, yellow, orange and green peppers.
  • Sauté each color pepper separately in  oil.
  • Take off some of each color pepper and reserve for garnishing the top.
  • Place one cup of rice in  a  bowl. Use the back of a cup to the press rice down.
  • Add red peppers and repeat the process layering rice and peppers until done.
  • Garnish the top. Assemble  prior to serving so it remains warm.
